  19. Scrub Fox: +Ester Castro Depending on how you want your macarons to come out, the French method is more for the home made look, for like family or friends. But if you want a more professional look, which is the one I prefer more, the Italian method is something you would want to go for. So that is why I think Nick uses the Italian method. So there isn't really a set "better method", it just goes with preference.
