Photoshop is not about "fixing" or editing everything, it is all about know what and how much to change. Retouching is an art, and requires knowledge from various disciplines, including painting or drawing, espeically when it comes to shadows and understanding how light behaves in real world. If you see a fake looking photo it is usually because iot was pushed too far in photoshop or someone was trying to create a composite without following the basics of perspective and angle, color and tone matching. Good black and white photography is actually more time consuming than color, because you have to edit image in color first, and make sure that all tones and contrast are well balanced or accented, and THEN you start converting it to black and white.
