MAKES 30
RECIPE CAN BE HALVED
For the macaron shells:
300g almond flour
300g pure icing sugar (without corn flour added to it)
110g liquefied egg whites (see below)
300g caster sugar
75g water
110g liquefied egg whites
2 drops gold food gel (optional)
2 drops yellow food gel (optional)
2 drops orange food gel (optional)
2 drops purple food gel (optional)
Gold Paint
5 tsp gold lustre dust
10tbsp vodka or vanilla extract
Chocolate ganache
400g dark cooking chocolate
190g thickened cream
